The easiest way to get local currency when traveling is to use a credit card at an ATM. I have traveled to Italy and China in the last year and both had plenty of ATMs. I'll let you know about Turkey after this week.
If you are concerned about potential credit card loss, make a note of the number (or last 4 digits) and the credit card phone number. You can leave that at home with a trusted person or carry with you so any problems can be reported.
Lastly, be sure to notify the credit card company, using the number on the back of the card, what days you will be gone and where you will be so that they don't think the card has been stolen and cut off use.
